For pastry chef Titouan Claudet of The Woodward hotel in Geneva, our teams conceived and designed a custom-made Fab One stainless steel cookie cutter. The goal was simple to articulate but challenging to achieve: to translate a chef’s vision into a tool capable of reproducing it identically with every service. Today, this custom-made Fab One cutter gives shape to the “Millefeuille,” a light vanilla and caramel mousse featured on the menu at 37 Bar.

The project began with a request from a pastry chef

When a chef creates a dessert with a shape that doesn’t yet exist, the utensil must be designed in collaboration with him. That is the starting point for this collaboration with Titouan Claudet, pastry chef at The Woodward hotel.

The brief called for a stainless steel cutter, designed with meticulous attention to detail, combining precision and durability. The cut must be clean on the first pass, and the tool must withstand hundreds of uses without warping.

Our role was to bridge the gap between a culinary concept and a finished product.

Why choose a custom Fab One cookie cutter instead of a store-bought one?

Standard cookie cutters come in classic shapes: circles, squares, ovals, and a few variations. As soon as a design strays from these templates, the catalog ends.

From Idea to Utensil: The Design Process

Understand the movement before drawing the part

A cookie cutter is designed based on the material it will cut through. Light foam does not behave the same way as puff pastry or a cookie. The design process therefore begins with a discussion with the chef: what texture, what motion, and what finish is expected on the cut edge.

Choose Stainless Steel for Durability

Stainless steel is the material of choice for this type of utensil. Its rigidity allows it to withstand heavy use without warping or deforming, even under repeated pressure or when handled vigorously.

Paying attention to the details that make a difference

A custom-made Fab One cutting die is built around details that you only notice when you use it: the sharpness of the edge, the finish of the welds, the absence of hard-to-clean corners, and how it feels in your hand. Meticulous work, carried out until the manager gives the final approval.
