D\u00e9glacer avec du vin blanc et r\u00e9duire de moiti\u00e9, mouiller \u00e0 hauteur, ajouter le bouquet garni + le concentr\u00e9 de tomate , retirer la queue + la pince puis le filtrer dans le passe-sauce et presser. Laisser infuser au moins 4 heures. <\/p>\n<p>C\u00e9leri rave: mandoliner et mettre dans une gla\u00e7ante. Assaisonner \u00e0 l\u2019envoi avec une vinaigrette. <\/p>\n<p>Cuire la queue de homard dans l\u2019eau bouillante 4 minutes, refroidir.<\/p>\n<p>Assaisonner et po\u00ealer les saint-jacques dans une
